When I opened Niche in 2005, I committed to create a menu based on the freshest local, seasonal ingredients. My cooking style is to prepare these ingredients as simply as possible to showcase their fresh and true flavors. In this pursuit, I am as inspired by a carrot that has just been plucked from the earth as a truffle flown in from Italy.
In the few years I have been here in St. Louis, I have been fortunate to build valuable relationships with talented local farmers, purveyors and other chefs who share our pride in delivering the highest quality food "from the farm to the table" and who each day are key contributors to our success.
